Weslaco-Peggye Rose Jenkins Couch, age 69, was born August 24, 1951, in Cotulla, Texas, and passed away March 9, 2021, due to complications from MS/Covid. Peggye was a resident of Weslaco, Texas, for the past 39 years. She is survived by her husband, William Cooper Couch, her sons, John Cooper and Raymond Scott (Leigha Beam), and her beautiful grandchildren, Allen Ray and Rayleigh Rose.
Peggye is preceded in death by her parents, Robert Jenkins and Nelta Jenkins-Benson, and brothers, Robert Edward, Raymond Otis, and Richard Scott.
Peggye is survived by sisters, Nelta Kathrine Hill, Nancy Sue Nieschwietz (John), Sandra Carol Stone (James), Betty Ann Kato (David), and Rachel Lea Mills, brother David Trent Jenkins (Maria Elizabeth), sister-in-law, Mary Jan Jenkins, stepfather, Charlie Benson, and many nieces and nephews.
Peggye was such a strong woman. She lived many years with difficult physical challenges but never complained. Peggye enjoyed cooking for her family. Everyone loved her King Ranch Chicken Casserole and Mississippi Mud Cake. She added lots of love to her sugar cookies that she made especially for her brothers. Peggye was a very special woman, wife, mother, daughter, sister, and grandmother.
A memorial service will be scheduled at a later date.
